Method:

1.

Put the water and half of the sugar into a small saucepan and bring to a boil.

2. Stir in Madeira and then leave the mixture to cool. This creates a syrup.

Melt the dark and the milk chocolate. Ideally, use a double boiler (or a double boiler insert). Do not let the water touch the bottom of the double boiler. Only let the water simmer. Do not allow it to boil or you may burn the chocolate.


If you must use a microwave, melt on medium heat for short periods being very careful not to overheat the mixture.

4. After the chocolate is melted, let it cool slightly.
5. Whisk egg yolks and the rest of the sugar together until light and fluffy.
6. Beat in the mascarpone until combined.

Carefully fold the mascarpone mixture into the melted chocolate.

Whisk egg whites until they form soft peaks, then fold into the chocolate mixture.

9.

Place half of the ladyfingers in the bottom of pie pan or in a large serving bowl.

10.

Pour half of the Madeira syrup over the ladyfingers and then cover with the mascarpone mixture.

11.

Repeat steps nine and ten to make another layer.

12.

Chill and then dust with cocoa powder before serving.
