With prices of $70 or more for a mere dozen chocolate dipped strawberries you'd think that gourmet chocolate strawberries are close to impossible to make at home yourself. But they're not! It's actually quite easy to make treats that are comparable to what the finest chocolatiers sell.

Which chocolate should you use
for chocolate covered strawberries?

Using the correct chocolate and melting method is critical for all chocolate making, but especially for making gourmet chocolate covered strawberries. The easiest product to use is Chocoley Bada Bing Bada Boom Dipping & Enrobing Formula. It does not require tempering, but for best results make sure you follow the temperature guidelines for melting the chocolate and for working with the chocolate.

If you’re tempering the chocolate, use Chocoley INDULGENCE Ultra Couverture Dipping & Enrobing Formula.

If you have extra Just Melt It! Fountain and Fondue chocolate, you can use it, but you’ll need to temper the chocolate whenever it’s not used in the fountain or being immediately consumed.

Another fun option is to use our special Coley Roley Chocolate Caramel Cream Center – it’s a mixture of our smooth creamy caramel and our V125 Couverture Semi-Sweet Dark chocolate! It’s a bit thicker, but still a delicious alternative that will work on your strawberries!

Before you make your strawberries, keep in mind that the shelf life of dipped strawberries is only 1-2 days because once you rinse the berry, it starts the decay mode. When you dip the strawberry, the warm chocolate accelerates the decay process.

How to make chocolate covered Strawberries - chocolate covered strawberries in white chocolate 6 Easy Steps for Basic Strawberry Dipping

Step 1: Rinse strawberries in cold water and pat dry. (Warning: Do not soak the berries in ice water to retain freshness and moisture. We know that keeps the berries fresh, red & cold – but you won’t be able to dry the strawberry enough and it will cause the chocolate to seize.)

Step 2: Hold strawberry by the stem and push into chocolate. Leave about 1/3 of an inch uncovered (on stem end).

Step 3: Gently tap your hand on the side of the bowl to allow excess chocolate to drip back into the bowl.

Step 4: Place chocolate covered strawberry onto a Heavy Weight Dipping Sheet lined tray.

Step 5: Let the chocolate set-up (harden) by placing the dipping sheet lined tray of chocolate covered strawberries on a level shelf in the refrigerator until it is obvious that chocolate is set-up. This can take between 15-30 minutes (Warning: don’t leave the chocolate in the refrigerator for too long. The chocolate can become too cold and will “sweat” or even crack when brought to room temperature. See “Important Note” below.)

Step 6: Store in an airtight container until ready to use.

Important Note: Some professional chocolatiers insist they are successful in leaving dipped berries in the refrigerator in an airtight container – others insist you can’t do that and that they must be stored at room temperature (in a cool room so that the chocolate doesn’t melt or soften)! So, it’s up to you to decide which you want to do. We suspect the success or failure of either method must be due to the differences in refrigerator and room temperatures and humidity levels. Remember, chocolate dipped strawberries only have a 1–2 day shelf life anyway, so leaving the berries out of the fridge is not going to cause the berries to spoil any faster.

Follow the basic 6 easy steps above and customize for the recipe below that you’re following!

Tuxedo Strawberries

    Tuxedo Strawberries - Chocolate covered strawberries dipped to look like a tuxedo. A wonderful wedding idea and for formal events!
  1. Dip strawberry into white chocolate and let it set up.
  2. After the white chocolate is dry, hold the strawberry by its stem and dip into dark or milk chocolate at a 45° angle and dip one side, and then the next side to make the jacket.
  3. After both flavors are set up, use Chocoley Drizzle & Design Dark chocolate to draw a bow tie and buttons.

Gold or Silver Sheen Metallic Dusted Chocolate Covered Strawberries

  1. After following the first three basic steps above, just after letting the chocolate drip off the berry, wait about 20-30 seconds for the chocolate to harden a little bit (it should happen quickly if the berries are cold).
  2. Roll the semi-hardened chocolate strawberry in Gold or Silver Sheen Metallic Gourmet Sugar Crystals - Or roll half in gold and half in silver.

Pecan or Almond Encrusted Chocolate Covered Strawberries

  1. After following the first three basic steps above, just after letting the chocolate drip off the berry, wait about 20-30 seconds for the chocolate to harden a little bit (it should happen quickly if the berries are cold).
  2. Roll the semi-hardened chocolate strawberry in finely chopped pecans or almonds.

Colorful Chocolate Covered Strawberry Bouquet

Use Chocoley Bada Bing Bada Boom Dipping and Enrobing White chocolate and our specially formulated chocolate coloring oils – as many colors as you want.

  1. Follow the basic steps above for each color that you are making.
  2. After all the berries are finished cut bamboo skewers to various lengths to be the “stem” of your strawberry flowers.
  3. Place one skewer into the stem end of each of the strawberries.
  4. Using a cup or vase, arrange the colored strawberries like a flower bouquet.

Double Chocolate Encrusted Chocolate Covered Strawberries

  1. Finely chop the same or a different flavor of chocolate that you’ll be using for dipping and set aside chopped chocolate in a small bowl.
  2. After following the first three basic steps above, just after letting the chocolate drip off the berry, wait about 20-30 seconds for the chocolate to harden a little bit (it should happen quickly if the berries are cold).
  3. Roll the semi-hardened chocolate strawberry in finely chopped chocolate.

Grand Mariner Infused Chocolate Covered Strawberries

  1. Rinse strawberries, but before you follow the basic steps above, inject about 2 teaspoons of Grand Marnier into each strawberry using a syringe or marinade injector.
  2. Refrigerate for about 30 minutes.
  3. Proceed with all basic steps.
  4. Decorate with Chocoley Drizzle & Design chocolate or Metallic Sheen Gourmet Sugar Crystals.

Caramel Dipped Chocolate Covered Strawberries

  1. Gently melt your Chocoley caramel until you reach 170° F – the consistency will become like a thick batter. You’ll be able to stir the caramel. Make sure not to overheat.
  2. Follow all of the basic steps for chocolate dipped strawberries.
  3. After the caramel has cooled and hardened, repeat the process, dipping the caramel covered strawberries into chocolate.
  4. Decorate with Chocoley Drizzle & Design chocolate.

Chocolate Cheesecake Strawberries

  1. Crush graham crackers into crumbs – either to a powder consistency or into very small pieces.
  2. Melt dark or white chocolate and add cheesecake flavoring oil to taste.
  3. After following the first three basic steps above, just after letting the chocolate drip off the berry, wait about 20-30 seconds for the chocolate to harden a little bit (it should happen quickly if the berries are cold).
  4. Roll the semi-hardened chocolate strawberry in graham cracker crumbs.

Cream Center Filled Chocolate Covered Strawberries

  1. After rinsing strawberries, use a paring knife to cut the stem off of the strawberries and hollow out the center if there is any strawberry flesh in it.
  2. Gently warm Chocoley Butter Cream Center or Chocoley Vanilla Cream Center until it is a pudding like consistency.
  3. Fill a polypropylene bag with the warmed center and fill the hollow strawberry to the top.
  4. Place the filled strawberries in the refrigerator for 10-15 minutes for the center to harden.
  5. Using our Swirl Dipping Tool, dip the strawberries in chocolate.
  6. Follow steps 4 and 5 above, and then
  7. Decorate with Chocoley Drizzle & Design chocolate.

Chocoley Peanut Butter Cream Center Dipped Chocolate Covered Strawberries

  1. Gently warm Chocoley Peanut Butter Cream Center until it is a pudding like consistency.
  2. Follow basic steps above except dip into Peanut Butter Cream Center instead of chocolate.
  3. After the strawberries and peanut butter cream center is firmed up in the refrigerator, repeat process by dipping in chocolate.
  4. Decorate with Chocoley Drizzle & Design chocolate.
